Food stalls are a popular culinary business that play an important role in fulfilling people’s daily food needs. As public awareness of health continues to grow, sanitation and hygiene have become crucial factors that determine service quality and customer satisfaction. This study aims to analyze the influence of sanitation and hygiene practices on customer satisfaction at Warung Makan Kirana Surabaya. Using a survey method through questionnaires, interviews, and kitchen observations, the data were analyzed descriptively and using simple linear regression. The results show that the cleanliness of the work area, equipment, and food handling is categorized as good and contributes positively to consumers’ assessments of taste, presentation, service, price, and the cleanliness of the stall. Customer recommendation rates and loyalty levels are also relatively high. These findings confirm that consistent sanitation and hygiene practices have a direct impact on increasing customer satisfaction and trust, although improvements in employees’ personal hygiene are still needed.
