Abstract
The yellow tofu industry began to be known by the wider community in the early 1990s, in previous years yellow tofu was only produced by a few cottage industries. After the 1990s, the public's interest in opening a business to market yellow tofu began to emerge, this is evident in the early 1990s that the marketing of yellow tofu was increasing and yellow tofu became mandatory souvenirs for regional and foreign tourists until now. The success of the yellow tofu industry in Kediri has not just gone smoothly, there have been many obstacles that have accompanied the development of the yellow tofu industry since the early 1990s, namely the 1998 economic crisis, the issue of borax in 2007, soaring prices and the difficulty of raw materials in 2009, to the pandemic of the corona virus which occurred. happened until now is a row of obstacles that accompany. But thanks to the efforts and persistence of industrial players and assisted by the government, especially the tourism office and the yellow tofu industrial culture in Kediri, it is progressing and growing rapidly. This research discusses (1) what were the factors of resistance and support for the yellow tofu industry in Kediri during the period 1990-2020; (2) How are the efforts to maintain the yellow tofu industry in Kediri in 1990- 2020 in the global competition. This study uses the historical research method which consists of four stages, namely the collection of sources obtained through electronic journals, newspapers, photo archives. The second stage is source criticism which tests and verifies the sources obtained. The third stage is interpretation, which is interpreting the data that has been obtained and has passed the verification process. The fourth stage is historiography, which is writing the results of historical research chronologically and analytically according to the research theme.
