Abstract

Background: Diabetes mellitus is characterized by increased blood glucose levels and is associated with oxidative stress. Almond milk and butterfly pea flower contain antioxidants that have the potential to help control blood glucose levels. Purpose: This study aimed to develop almond milk with butterfly pea flower extract as a functional beverage for individuals with diabetes and to evaluate its acceptability and antioxidant activity. Methods: This study used an experimental method with a Completely Randomized Design (CRD). A total of 30 semi-trained panelists conducted an organoleptic test by assessing color, aroma, viscosity, and taste. The research data were analyzed using the Kruskal Wallis test, followed by the Mann-Whitney test when significant differences were found. Result: The addition of butterfly pea flower extract had a significant effect on color, aroma, and taste, but did not have a significant effect on viscosity. The best formula was F1, consisting of 75 ml almond milk and 25 ml butterfly pea flower extract. This formula had an antioxidant activity level of 131.10 ppm per 100 ml, which was classified as moderate. Conclusion: Formula F1 has the potential to be developed as a complementary functional beverage for individuals with diabetes because it was accepted by the panelists and showed moderate antioxidant activity.
